Pinzeria By Bontempi
This is one of few exclusive cafes which offers its guests Pinza®, an author, innovative and patented dish by Italian cuisine maestro Valentino Bontempi. The name Pinza® derives from Latin “Pinsere”, which means “to roll out”, “to grind”. When Valentino was studying history, culture and traditions of cuisine in Italy and Rome Empire for many years, he noticed a flat crispy bread, extraordinary and simple at the same time, very popular in Ancient Rome. Unfortunately, its recipe and name were lost. But nothing is impossible for a true guru – Valentino found out its ingredients: ground grain (barley, oats, millet, wheat), salt and flavored greens and spices. First, it was a delight for priests and monks – they put everything they had on that bread: vegetables, fruits, meat. Valentino, inspired by this meal’s story, made his own recipe and named it Pinza®
Chef Bontempi uses the blend of 3 grains: wheat, soya and rice. The keystone of his recipe is, of course, the unique yeasts brought specially from Italy, which make Pinza® so fluffy and light. Unlike traditional pizza, which is quickly cooked and often called “fast food”, Pinza® is kept during 72 hours before baking – that makes the dough super delicious. Another Pinza’s® feature is the use of more water when mixing the dough, making Pinza® less caloric than traditional pizza and a stomach-friendly product, as it does not cause any sense of heaviness. It is perfect with any kinds of fillings: traditional ones and new special Italian fillings. So, Valentino Bontempi will go on to surprise the guests.
Valentino was born in Concesio Brescia (Lombardia region), where he has graduated from a prestigious school, Caterina de Medici. He has worked with the best Italian Chefs, famous all over the world. One of them is Enzo Boschi, Chef of Beauty Farm Villa Paradiso (Italy), who has helped him choose his own way – high gastronomic dietary cuisine. He has been living and working in Russia for many years, and he is totally in love with his “second homeland”. During 25 years in restaurant business he achieved phenomenal success and wrote several gastronomic books, which immediately became best-sellers. Valentino is also a concept Chef of new restaurant Goose Goose in Saint Petersburg and an ideologist of special and unique restaurant - PINZERIA® BY BONTEMPI.
